An Unlikely Meal

The monitor lizard is white fleshed and excellent eating.

TO PREPARE

Cut off the limbs close to the body, plus the base of the tail. Scrub each part with a bristle brush or course cloth, boil for at least 1 hour and remove from water. Peel off skin by sliding a sharp knife underneath. Fry the portions in a hot pan until brown or crispy, according to taste.

A monitor lizard is delicious when cooked properly, although the locals will not eat it.
